Savory Turkey and Broccoli Stuffed Sweet Potatoes

4 medium sweet potatoes

1 lb ground turkey

2 cups broccoli florets, chopped

1 cup sharp cheddar cheese, shredded

1/2 cup Greek yogurt (or sour cream)

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

Chopped green onions, for garnish

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Roast the Sweet Potatoes: Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and drizzle with a bit of olive oil. Bake in the preheated oven for 45-60 minutes, or until they are fork-tender and caramelized.

      Cook the Turkey: While the sweet potatoes are baking, heat the remaining olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the ground turkey, onion powder, smoked paprika, Italian seasoning, salt, and pepper. Cook until the turkey is no longer pink, about 5-7 minutes.

        Add the Broccoli: Once the turkey is cooked, add the chopped broccoli florets to the skillet. Stir and cook for an additional 5 minutes, until the broccoli is tender.

          Combine the Filling: Remove the skillet from heat and stir in the Greek yogurt and half of the cheddar cheese until well combined.

            Stuff the Sweet Potatoes: Once the sweet potatoes are ready, carefully slice them open lengthwise. Fluff the insides gently with a fork, then spoon the turkey and broccoli mixture into each sweet potato.

              Top with Cheese: Sprinkle the remaining cheddar cheese over the stuffed sweet potatoes.

                Bake Again: Return the stuffed sweet potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

                  Garnish and Serve: Remove from the oven and let cool slightly. Garnish with chopped green onions before serving.
