Ingredients

1 pound ground beef (or turkey for a lighter option)

1 can (15 oz) pumpkin puree

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 medium yellow onion, diced

3 cloves garlic, minced

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon cinnamon

½ teaspoon cayenne pepper (adjust to taste)

2 cups low-sodium vegetable or beef broth

Salt and pepper, to taste

Optional toppings: sour cream, shredded cheese, chopped cilantro, avocado slices

Instructions

Sauté the Meat: In a skillet over medium heat, brown the ground beef (or turkey) until fully cooked, about 5-7 minutes. Drain excess fat if necessary and transfer the meat to the slow cooker.

Add the Vegetables: In the slow cooker, add the diced onion and minced garlic on top of the browned meat.

Incorporate the Pumpkin and Beans: Pour in the pumpkin puree, kidney beans, black beans, and diced tomatoes (with their juices).

Spice It Up: Sprinkle the chili powder, cumin, smoked paprika, cinnamon, and cayenne pepper into the mixture. Add a generous pinch of salt and pepper.

Pour in the Broth: Gently stir the contents to combine everything. Then, add the vegetable or beef broth to reach your desired consistency.

Cook: Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours. The chili is ready when all the ingredients meld together and the flavors deepen.

Serve: Taste and adjust seasoning if necessary. Serve hot topped with your choice of sour cream, cheese, cilantro, or avocado slices.
